I would approve racing at Knutstorp and Portero De Los Funes.
Oulton Park's BTCC race this year in the other hand was really dull so I think that Donnington may be a better solution.

Those were touring cars. But yeah, if you're gonna have a race at Oulton, the International layout is the way to go - BTCC is going back to that for 2015.

I agree on Knutstorp and Portero de los Funes. Assen is great for bikes, but it doesn't produce good racing when it comes to cars.
The full, current lay-out of Zandvoort can't be used before 1999 though.

As far as I know those tracks have never been used by cars and I really doubt a digital version exists of those tracks.
There aren't any barriers at all at those tracks, so from a safety perspective racing there is not to be recommended.

This is canon anyway. I can say Hidden Valley is scheduled in the first place instead of Eastern Creek, so Rejects-1 organizer have work together with Hidden Valley owner to bring the track to international standard.

Personally, I would like the Australian round to be held at Oran Park because the track is so much fun to drive. Oh yeah, it's also a figure of 8 circuit and that just makes it even more awesome. I know, I've driven it on TOCA race driver 2 on my PS2.

It really depends. I mean, are we going for realism in regards to tracks? In 1994, Hidden Valley hadn't even hosted a major national event, as far as I can tell.
And there are definitely more interesting and appropriate tracks in Australia, too. Outside of Oran Park, there's Phillip Island, which is interesting if anything because of its speed, and who can forget Bathurst, although if I recall correctly Bathurst was already tried for this series (either in its current form or old form) without success. Outside of those tracks, if you want international credentials there's Sandown, which hosted a round of the World Sportscar Championship in the 1980s for a year or two (or more?), and Surfers Paradise, which as many might be aware hosted Indycar/ChampCar for about 20 years.

I have an offer to switch Australian round with New Zealand round while we still discussing the venue for Australia. Here's some of my notes with Australian tracks:
